Woodcock

Instructions

  1. Pluck and clean the woodcock. Remove the innards carefully, setting them aside. Discard the crop (the hard pouch in the throat).
  2. In a pot, combine the onion, garlic, sherry, vinegar, and olive oil. Add the woodcock raw and cook until done.
  3. Transfer the cooked woodcock to a serving dish. Strain the cooking liquid into a saucepan.
  4. Grind the reserved innards finely and heat them in the strained sauce until it thickens to a fine custard-like consistency. Add the caldo de cocido (broth from Spanish stew) and simmer together.
  5. Serve the sauce alongside or over the woodcock.
