Queso Helado (Frozen Custard Dessert)

Ingredients
- 24 egg yolks egg yolks
- 500 g sugar
- 1 liter milk
- vanilla or lemon zest
Instructions
- Heat one liter of milk with vanilla or lemon zest until it comes to a boil, then set aside to cool completely.
- While the milk cools, beat the 24 egg yolks with the sugar until very pale and foamy.
- Once the milk is cold, slowly incorporate it into the beaten egg yolk mixture, stirring constantly.
- Place the mixture over gentle heat, stirring continuously. As soon as it begins to thicken, remove it from the heat before it comes to a boil.
- Continue beating the mixture until it becomes foamy and completely cold.
- Pour the mixture into molds and place them in the freezer (or in ice, using the period method) until frozen solid.
