Queso Helado (Frozen Custard Dessert)

  1. Heat one liter of milk with vanilla or lemon zest until it comes to a boil, then set aside to cool completely.
  2. While the milk cools, beat the 24 egg yolks with the sugar until very pale and foamy.
  3. Once the milk is cold, slowly incorporate it into the beaten egg yolk mixture, stirring constantly.
  4. Place the mixture over gentle heat, stirring continuously. As soon as it begins to thicken, remove it from the heat before it comes to a boil.
  5. Continue beating the mixture until it becomes foamy and completely cold.
  6. Pour the mixture into molds and place them in the freezer (or in ice, using the period method) until frozen solid.
