Crab Croquettes

Ingredients
- crabs
- 1 piece celery
- 1 small piece onion
- 0.5 teacup fine powdered cracker
- to taste pepper and salt
- a least bit fine red pepper
- 2 eggs
- powdered crackers
- lard
Instructions
- Have crabs well boiled in salt and water, then pick them clean from the shell and chop fine.
- Take the large end of a piece of celery and grate it into the crab.
- Chop a small piece of onion fine and mix it with the crab.
- Mix half a teacup of fine powdered cracker into the crab mixture.
- Season with pepper and salt, and also the least bit of fine red pepper.
- Form the mixture into oblong shapes.
- Beat two eggs.
- Dip each croquette in the beaten egg.
- Roll the dipped croquettes in powdered crackers.
- Have your lard hot and fry the croquettes just before wanted at table.
