Crab Croquettes

  1. Have crabs well boiled in salt and water, then pick them clean from the shell and chop fine.
  2. Take the large end of a piece of celery and grate it into the crab.
  3. Chop a small piece of onion fine and mix it with the crab.
  4. Mix half a teacup of fine powdered cracker into the crab mixture.
  5. Season with pepper and salt, and also the least bit of fine red pepper.
  6. Form the mixture into oblong shapes.
  7. Beat two eggs.
  8. Dip each croquette in the beaten egg.
  9. Roll the dipped croquettes in powdered crackers.
  10. Have your lard hot and fry the croquettes just before wanted at table.
