Lemon Pudding

Ingredients
- 2 cuartas rich milk
- 2 oz butter
- 4 oz sugar
- 1/2 tbsp ground cinnamon
- 10 oz breadcrumbs (grated bread)
- 1 lemon, zested (outer skin, not pith)
- 4 eggs, beaten
- 1 large spoon good cognac
- Málaga raisins (to garnish)
- cinnamon bonbons (to garnish)
Instructions
- Boil the rich milk, then add butter, sugar and ground cinnamon.
- Mix in the breadcrumbs and lemon zest.
- Beat the eggs and add them with a large spoon of cognac.
- Bake in a buttered mold for one hour.
- Serve studded with Málaga raisins and cinnamon bonbons.
