Sponge Cake Boxes

Ingredients
- 12 whole eggs
- 1 pound sugar
- 0.5 cup flour
- 1 whole egg white
- 100 grams sugar
Instructions
- Beat the eggs and sugar together thoroughly until very pale and well combined. Add the flour and continue beating until the batter is fully worked and smooth.
- Fill small paper cases with the batter, which should be prepared in advance. Bake in a gentle oven until a skewer inserted in the center comes out clean.
- While the cakes bake, prepare the white glaze by beating together one egg white and 100 grams of sugar until very frothy. As soon as the cakes are removed from the oven, brush the glaze over the top of each cake using a feather, allowing it to set.
