Fricasseed Chicken

Instructions

  1. Select a tender chicken and clean it well inside.
  2. Singe all pin feathers off over the fire.
  3. Hard boil two eggs, then take the yolks and rub them fine into one tablespoon of butter.
  4. Dissolve one tablespoon of corn starch into the least bit of water.
  5. Add the dissolved corn starch to the butter and egg yolk mixture, stirring well together and ensuring the mixture is free from lumps.
  6. Cut the chicken up before boiling.
  7. Season the chicken with salt and pepper while cooking.
  8. Just before sending to table, stir the fricassee into the chicken.
