Fricasseed Chicken

Ingredients
- 1 chicken chicken, tender
- 2 whole eggs
- 1 tablespoon butter
- 1 tablespoon corn starch
- salt and pepper
Instructions
- Select a tender chicken and clean it well inside.
- Singe all pin feathers off over the fire.
- Hard boil two eggs, then take the yolks and rub them fine into one tablespoon of butter.
- Dissolve one tablespoon of corn starch into the least bit of water.
- Add the dissolved corn starch to the butter and egg yolk mixture, stirring well together and ensuring the mixture is free from lumps.
- Cut the chicken up before boiling.
- Season the chicken with salt and pepper while cooking.
- Just before sending to table, stir the fricassee into the chicken.
