Braised Fava Beans

Ingredients
- pork fat (grasa de chancho)
- bacon/salt pork (tocino)
- garlic (ajos)
- onion
- parsley
- pepper
- fava beans (habas)
- salt
- water
- 1 leaf bay leaf (laurel)
- oregano
- mint (menta)
- thyme (tomillo)
- ham
- blood sausage (morcilla)
- 1/2 small cup anise liqueur (anisado)
Instructions
- Heat pork fat in a pan, then add small pieces of bacon, garlic, onion and parsley in good quantity.
- When browned, add a sprinkle of pepper, then the fava beans and enough salt.
- Cook slowly for one hour, covered with a deep plate holding water, bay leaf, oregano, mint and thyme; drizzle drops of that water into the stew periodically.
- After the hour, add ham and blood sausage cut small and half a small cup of anise liqueur.
- Let it season half an hour, then serve.
