Fava Bean Purée

  1. Peel the large fava beans and cook them in a pot with water and salt.
  2. After a quarter hour's boiling, drain them, plunge them into cold water to turn them green again, then drain once more.
  3. In a pan, combine a piece of butter with pepper, salt and a spoonful of flour.
  4. Add the beans with a bunch of parsley and cebolletas (spring onions), and moisten with broth.
  5. Boil half an hour, then pass through a sieve to extract the pulp.
  6. Stir in a little butter and serve.
