Braised Hen

Ingredients
- 1 whole hen
- generous amount tocino (cured pork belly)
- several tablespoons olive oil
- 1 medium onion
- to taste salt
- a pinch thyme
- 1-2 leaves bay leaf
- to taste black pepper
- 2-3 cloves garlic
- a splash wine
- a splash cognac
- a little tomato
Instructions
- Clean and cut the hen into pieces. Arrange the hen pieces in a heavy pot or casserole with the tocino (cured pork belly), olive oil, onion, salt, thyme, bay leaf, pepper, and garlic. Pour over the wine and cognac so that everything is well covered. Cover the pot very well and let it braise over very low heat for about three hours, until the hen is completely tender.
- Before serving, strain the sauce and stir in a little tomato. Return the hen to the pot or arrange on a serving platter and pour the sauce over it.
