Lobster in Sauce

Ingredients
- 1 lobster
- onion
- garlic
- parsley
- Gruyère or Parma cheese
- paprika (pimentón)
- nutmeg
- allspice (pimienta inglesa)
- white wine
- olive oil
Instructions
- Cut the lobster into pieces without removing the shell. Remove the vein carefully, taking care not to lose any of the juices.
- Make a mixture of finely chopped onion, garlic, and parsley. Add grated Gruyère or Parma cheese to this mixture.
- In a cooking pot, layer the mixture and lobster pieces alternately. Dust each layer with paprika (pimentón), nutmeg, and allspice. Pour white wine and olive oil over the layers.
- Place the pot over low heat and cook until the lobster is done. Serve hot.
