Lobster in Sauce

Instructions

  1. Cut the lobster into pieces without removing the shell. Remove the vein carefully, taking care not to lose any of the juices.
  2. Make a mixture of finely chopped onion, garlic, and parsley. Add grated Gruyère or Parma cheese to this mixture.
  3. In a cooking pot, layer the mixture and lobster pieces alternately. Dust each layer with paprika (pimentón), nutmeg, and allspice. Pour white wine and olive oil over the layers.
  4. Place the pot over low heat and cook until the lobster is done. Serve hot.
