Fruit Pudding

Ingredients
- 2 large pears
- 3 medium peaches
- 3 medium apples
- 25 grams sponge cake (bizcocho)
- 25 grams almonds
- 4 whole egg yolks
- 100 grams fine sugar
- 1 tablespoon breadcrumbs
- 1 tablespoon cinnamon
- 4 whole egg whites
Instructions
- Finely chop the two pears, three peaches, and three apples. Finely chop the sponge cake and almonds. In a large bowl, combine the chopped fruits, sponge cake, and almonds with the egg yolks, sugar, breadcrumbs, and ground cinnamon. Mix everything together thoroughly.
- In a separate bowl, beat the four egg whites until they form stiff peaks (a point of snow). Gently fold the beaten egg whites into the fruit mixture.
- Pour the mixture into a pudding mold and place the mold in a bain-marie (water bath). Cook until set.
