Fruit Pudding

Instructions

  1. Finely chop the two pears, three peaches, and three apples. Finely chop the sponge cake and almonds. In a large bowl, combine the chopped fruits, sponge cake, and almonds with the egg yolks, sugar, breadcrumbs, and ground cinnamon. Mix everything together thoroughly.
  2. In a separate bowl, beat the four egg whites until they form stiff peaks (a point of snow). Gently fold the beaten egg whites into the fruit mixture.
  3. Pour the mixture into a pudding mold and place the mold in a bain-marie (water bath). Cook until set.
