Veal à la Jardinière

Ingredients
- veal
- onion
- garlic
- bell peppers
- tomatoes
- parsley
- black pepper
- olive oil
- 2 parts white wine
- salt
- manteca (lard)
- cinnamon
- 1 small ladle cocido broth
- lemon juice
Instructions
- Place the raw veal in a pot with the finely minced onion, garlic, bell peppers, tomatoes, parsley, black pepper, olive oil, white wine (double the quantity of oil), salt, manteca, and cinnamon.
- Bring to a slow simmer and cook gently. Near the end of cooking, add a small ladle of cocido broth.
- When the veal is cooked through, strain the sauce and finish it with a squeeze of fresh lemon juice.
