Veal à la Jardinière

Instructions

  1. Place the raw veal in a pot with the finely minced onion, garlic, bell peppers, tomatoes, parsley, black pepper, olive oil, white wine (double the quantity of oil), salt, manteca, and cinnamon.
  2. Bring to a slow simmer and cook gently. Near the end of cooking, add a small ladle of cocido broth.
  3. When the veal is cooked through, strain the sauce and finish it with a squeeze of fresh lemon juice.
