  1. Clean the brains thoroughly of the membrane covering them. Cook in salted water until tender, then cool completely and cut into small pieces.
  2. Prepare a batter by mixing the flour, egg yolks, milk, and salt. Just before frying, beat the egg whites to stiff peaks and fold them into the batter.
  3. Take a spoonful of batter, place a small piece of brain in the center, and carefully drop into very hot oil. Fry until golden and crispy.
  4. Arrange on a serving platter lined with a napkin, garnishing with sprigs of parsley or watercress. The author notes this fried preparation is also excellent made with small pieces of chicken breast or poultry instead of brain.
