Ingredients

Instructions

  1. Beat the egg yolk until it becomes thick and pale.
  2. Measure out one jícara (Spanish cup measure, roughly 1 cup) of olive oil per egg yolk.
  3. While continuing to beat the yolk constantly in the same direction, add the oil drop by drop, incorporating it slowly and steadily.
  4. Once the mixture begins to emulsify and thicken, add the oil in slightly larger quantities, but continue beating without pause.
  5. Season with salt to taste.
  6. Add lemon juice.
  7. If desired, fold in cream at the end.
