Ingredients
- 1 egg yolk
- 1 jícara olive oil
- to taste salt
- to taste lemon juice
- optional cream
Instructions
- Beat the egg yolk until it becomes thick and pale.
- Measure out one jícara (Spanish cup measure, roughly 1 cup) of olive oil per egg yolk.
- While continuing to beat the yolk constantly in the same direction, add the oil drop by drop, incorporating it slowly and steadily.
- Once the mixture begins to emulsify and thicken, add the oil in slightly larger quantities, but continue beating without pause.
- Season with salt to taste.
- Add lemon juice.
- If desired, fold in cream at the end.
