Rice with Chicken Offal

Ingredients
- oil or manteca (lard)
- onion
- chicken offal (menudillos — gizzard, heart, liver)
- rice
- caldo (broth)
- a few strips canned red pepper
Instructions
- Heat oil or lard in a heavy pot.
- Fry the chopped onion and chicken offal until the offal is lightly browned.
- Add the rice and stir to coat with the fat.
- Pour in enough broth to cook the rice through.
- If using them, add a few strips of canned red pepper.
- Cook until the rice is tender and has absorbed the liquid.
