Strawberry Jam

Ingredients
- fresh strawberries
- 0.5 pint granulated sugar
Instructions
- Select fresh berries that are not overripe.
- Squeeze the juice from the berries through a clean linen cloth.
- Add one-half pint of granulated sugar to every pint of juice and place in a porcelain kettle.
- Bring to a boil.
- When the mixture boils as thick as honey, add the berries from which you squeezed the juice back into the syrup.
- Let it continue to boil until it reaches the thickness of mush, at which point it is cooked enough.
- Pour into glasses or jars.
- Place paper wet with brandy on top, cover, and store in a dark place.
