High-Life Rice Pudding

Ingredients
- 1 lb good white rice, three times washed
- 2 cups milk
- 1 stick cinnamon
- 1 piece lemon
- 1 jug milk (to add during cooking)
- 1 lb sugar
- 1 cup nogada (walnut-and-milk sauce)
- cinnamon and ground sugar (for dusting)
Instructions
- Soak washed rice six hours, then cook with milk, cinnamon and lemon.
- Add a jug of milk as the rice swells and absorbs it.
- When almost done, add sugar, stirring one-handed with a reed to avoid curdling.
- Off the heat, stir in a cup of nogada (walnut-milk sauce).
- Serve dusted with cinnamon and ground sugar.
