Spring Eggs

  1. Boil the cabbage, artichokes, tender fava beans, asparagus, and peas separately in salted water until tender. Once cooked, sauté them together in manteca (lard) with strips of jamón (cured ham) and red bell pepper. Prepare a tomato sauce and add it to the vegetables, coating them well.
  2. Arrange the sautéed vegetables in a besuguera (an oval earthenware or metal baking dish). Break eggs over the top of the vegetables. Sprinkle generously with grated cheese and dot with butter.
  3. Bake in the oven until the eggs are set and the top is golden and bubbling. This makes an excellent dish.
