Instructions

  1. Half an hour before serving, with the coffee set between the sieves, pour 3 spoonfuls of cold water over the grounds to moisten them.
  2. Pour the hot water slowly, in three emissions, to release the perfume.
  3. Roast the coffee carefully, stopping when the grain is coated in its natural oil; cool it spread between cloths and store stoppered.
  4. Grind only at the moment of making it for the fullest aroma.
