Eggs in Their Shirt (Poached Eggs with Béchamel)

Ingredients

• water
• salt
• eggs
• salsa blanca (béchamel sauce)

Instructions

1. Bring water to a boil with salt, as in the previous recipe.
2. When the water is at a rolling boil, crack the eggs carefully and slip them in one at a time, taking care that the yolk remains well wrapped in the white.
3. Before the yolks become hard, remove them with a slotted spoon.
4. Pour béchamel sauce over the top and serve.
