Fried Eels with Toasted Flour Sauce

  1. Clean the eels and remove their skin. Season with fine salt. Coil them and fry in hot oil until golden. Once fried, prepare a sauce by combining toasted flour with minced garlic and parsley, and a little black pepper. Add a little caldo (stock) to the pan with the fried eels. Stir the cazuela (earthenware cooking vessel) well to blend everything together.
