  1. For the standard dough: combine equal parts water, already-fried oil, and melted manteca (lard). Add one egg per cup of combined liquid and season with salt. Mix thoroughly, then gradually incorporate fine wheat flour while kneading until the dough reaches the proper consistency.
  2. Extend the dough on a work surface and fill with picadillo (minced meat). Bake in the oven or fry in very hot oil until golden.
  3. For fish-filled variant: prepare the liquid using three parts oil to two parts water. For every five cups of this base liquid, add two cups orange juice, one glass white wine, and three egg yolks. Use this enriched liquid to make the dough following the same method, then fill with diced fish and cook as above.
