Bishop's Soup

Ingredients
- butter
- flour
- broth (caldo)
- egg yolks
- a little sherry (jerez)
- egg whites
Instructions
- Melt butter in a saucepan over moderate heat. Add flour, stirring constantly. Slowly incorporate the broth (caldo), continuing to stir without stopping. Beat the egg yolks separately and gradually blend them into the mixture until fully incorporated.
- Once well combined, add a little sherry and allow to simmer briefly. In a separate bowl, beat the egg whites to stiff peaks. Using a spoon, drop small portions of the beaten whites into hot fat and fry until set, then add these fried white fragments to the soup a little at a time.
