Bishop's Soup

Ingredients
- butter
- flour
- broth (caldo)
- egg yolks
- sherry (jerez)
- egg whites
Instructions
- Melt butter in a saucepan over moderate heat.
- Add flour, stirring constantly.
- Slowly incorporate the broth (caldo), continuing to stir without stopping.
- Beat the egg yolks separately and gradually blend them into the mixture until fully incorporated.
- Once well combined, add a little sherry and allow to simmer briefly.
- In a separate bowl, beat the egg whites to stiff peaks.
- Using a spoon, drop small portions of the beaten whites into hot fat and fry until set, then add these fried white fragments to the soup a little at a time.
