Compound Tomato Sauce

Ingredients
- 1 peck ripe tomatoes
- 1 teacupful salt
- 2 ounces fine allspice
- 1 ounce fine cloves
- 1 tablespoonful black pepper
- 1 tablespoonful cayenne pepper
- 5 large silver skin onions
- 1 quart vinegar
Instructions
- Cut the ripe tomatoes into slices and place them in a vessel.
- Add one teacupful of salt, two ounces of fine allspice, one ounce of fine cloves, one tablespoonful of black pepper, one tablespoonful of cayenne pepper, and five large silver skin onions cut up fine.
- Mix well together and let the whole stand for twenty-four hours.
- Put the mixture to cook with one quart of vinegar.
- Let it cook all day, stirring occasionally, until it becomes thick.
- Strain all skin and seeds out of it through a sieve.
- When cool, put it in a demijohn for storage.
