Spiced Round

Instructions

  1. Rub the twenty pound round of beef thoroughly with a tea-cup of salt, two tablespoonfuls of cayenne pepper, one tablespoon of black pepper, a quarter pound each of ground allspice and ground cloves, working the spices well into the meat.
  2. Lay the seasoned beef round into a vessel that fits it snugly and pour two quarts of vinegar over it.
  3. Let it lay in the vinegar for one week, turning it over once every day and keeping it covered tight to retain the flavor.
  4. Tie the beef up tight in a clean cloth.
  5. Pour all the juice that accumulated around the beef into a kettle along with the beef bundle, then add two quarts of water.
  6. Bring to a boil and let it cook for four hours and a quarter.
  7. Remove from the kettle and let it cool completely before serving.
  8. Slice thin when serving, as it is excellent for luncheons and parties.
