Instructions

  1. Weigh out equal quantities of fruit and sugar. Place the plums (choose good, green ones) in a pot and cook until they begin to fall apart. Drain them thoroughly.
  2. Separately, prepare a syrup (almíbar) brought to the caramel stage. Return the drained plums to the heat and cook alone, stirring constantly. When the mixture becomes thick, remove from the fire and mix it with the caramel syrup, stirring vigorously until well combined. Transfer to jars.
