Meringue Cake

Instructions

  1. Bake a sponge cake of your desired size and shape. Place it on a serving platter.
  2. Prepare a sugar syrup (almíbar) at proper consistency and flavor it with a little sherry. Pierce the sponge cake all over with a fork so the syrup is absorbed throughout.
  3. Spread meringue over the top of the cake, shaping it into a pyramid form. Finish by sprinkling with pearl sugar (grajeas) or dusting with cinnamon.
