Mantecados (Lard Cakes)

  1. Heat the melted lard (manteca) until it is warm but not hot. Pour in the rum or white wine and add the sugar. Stir everything together thoroughly until the sugar is completely dissolved.
  2. Gradually mix in flour, working it in carefully until you have a dough that no longer sticks to your fingers.
  3. Cut the mantecados using a small fine cup or mold, and place them on a baking sheet. Bake in the oven until lightly golden.
  4. When they come out of the oven, dust them generously with finely ground sugar.
