Swiss Chard Packets

Ingredients
- Swiss chard
- water
- salt
- onion
- jamón (cured ham)
- parsley
- a generous amount Swiss chard
- 2 eggs
- a little caldo (broth)
- 1 egg
- white pepper
- flour
- 1 egg
- oil or lard
- sauce
Instructions
- Clean and cut the Swiss chard. Boil the chard in salted water until tender. Drain well and reserve whole leaves for wrapping; set aside the remaining cooked chard for the filling.
- Prepare the filling: In a sauté pan, gently cook the diced onion over medium heat until softened. Add the cubed jamón (cured ham) and parsley, stirring to combine. Add the generous amount of cooked chard and the hard-boiled egg pieces to the pan, along with a little caldo (broth). Cook together, stirring occasionally, until the mixture is well combined and heated through.
- Remove the pan from heat and allow to cool slightly. Mix in the raw egg, salt, and white pepper until the filling is evenly combined and holds together.
- Assemble the packets: Lay out each reserved chard leaf and place a spoonful of filling in the center. Fold or roll the leaf around the filling to create a neat packet.
- Coat each packet: Lightly dust with flour, then dip in the beaten egg, coating all sides.
- Fry the packets in oil or manteca (lard) over medium-high heat until golden on all sides, turning carefully.
- Transfer to a serving platter and drizzle with the sauce of your choice before serving.
