Leg of Mutton Peasant Style

Instructions

  1. Remove the bone from the cavity of the leg of mutton.
  2. Rub the meat all over with a clove of garlic.
  3. In a heavy pot or cazuela (earthenware cooking vessel), sauté the leg with chopped salt pork.
  4. Season with salt and pepper.
  5. When the meat is halfway cooked, transfer it to a round vessel.
  6. Moisten it with the cooking liquid (its juices).
  7. Arrange the pre-cooked white beans in a layer around the leg of mutton.
  8. On top of the beans, lay the peeled raw potatoes, seasoned with salt and pepper.
  9. Cover everything with broth (caldo), bring to a boil, then cover the pot and let simmer until everything is well cooked.
