Leg of Mutton Peasant Style

Ingredients
- 1 leg of mutton
- 1 clove garlic
- salt pork or lard (tocino)
- salt
- pepper
- white beans (alubias)
- potatoes
- caldo (broth)
Instructions
- Remove the bone from the cavity of the leg of mutton.
- Rub the meat all over with a clove of garlic.
- In a heavy pot or cazuela (earthenware cooking vessel), sauté the leg with chopped salt pork.
- Season with salt and pepper.
- When the meat is halfway cooked, transfer it to a round vessel.
- Moisten it with the cooking liquid (its juices).
- Arrange the pre-cooked white beans in a layer around the leg of mutton.
- On top of the beans, lay the peeled raw potatoes, seasoned with salt and pepper.
- Cover everything with broth (caldo), bring to a boil, then cover the pot and let simmer until everything is well cooked.
