Beef Pudding

Ingredients
- beef (loin or fresh ham/leg cut), parboiled
- pepper
- 1 spoonful vinegar
- salt
- 6 eggs
- 6 walnuts, shelled and skinned, ground
- toasted bread, grated
- 1 ounce butter
- almonds
- Málaga raisins
- breadcrumbs
- liquid tomato sauce
Instructions
- Parboil a piece of beef from the loin or leg (jamón).
- Chop it, pound it in a mortar, pull it apart, remove nerves and skins, and grind and shred it again.
- Season with pepper, a spoonful of vinegar and salt, and let it marinate for an hour.
- Beat six eggs, grind six shelled and skinned walnuts, and grate a piece of toasted bread.
- Mix everything together, stirring well and adding an ounce of butter, pepper, almonds and Málaga raisins.
- Butter and breadcrumb the pudding mold, fill it with the mixture, and bake in a moderate oven.
- Serve with a liquid tomato sauce.
