Beef Pudding

Instructions

  1. Parboil a piece of beef from the loin or leg (jamón).
  2. Chop it, pound it in a mortar, pull it apart, remove nerves and skins, and grind and shred it again.
  3. Season with pepper, a spoonful of vinegar and salt, and let it marinate for an hour.
  4. Beat six eggs, grind six shelled and skinned walnuts, and grate a piece of toasted bread.
  5. Mix everything together, stirring well and adding an ounce of butter, pepper, almonds and Málaga raisins.
  6. Butter and breadcrumb the pudding mold, fill it with the mixture, and bake in a moderate oven.
  7. Serve with a liquid tomato sauce.
