Macaroni with Tomato

  1. Cook the macaroni in salted water until tender. Drain well. Prepare a sauce using manteca de vaca (beef lard) and tomato. In a baking dish (besuguera), layer the ingredients: spread a layer of tomato sauce on the bottom, then a layer of macaroni, then a layer of grated Parmesan or ball cheese. Repeat these layers until the dish is full, finishing with a final layer of tomato sauce on top. Place in the oven and bake until the top is golden. Serve the macaroni in the same baking dish or pot in which it was cooked.
