Lamb's Tongue with Tomato

Instructions

  1. Clean and blanch the lamb's tongue in boiling water, then drain well.
  2. Cook the tongue in broth or water with a small bundle of fresh herbs, salt, pepper, onions, and carrots until tender.
  3. Once cooked, split the tongue lengthwise. Carefully skin it.
  4. Wrap the skinned tongue in oiled paper (untada de aceite — oil-coated).
  5. Soak it in tomato sauce and let it rest on the grill for a while.
  6. Serve still wrapped in the same paper.
