Lamb's Tongue with Tomato

Ingredients
- 1 whole lamb's tongue
- caldo (broth) or water
- 1 small bunch fresh herbs
- to taste salt
- to taste black pepper
- 2–3 whole onions
- 2–3 whole carrots
- as needed olive oil
- as needed tomato sauce
Instructions
- Clean and blanch the lamb's tongue in boiling water, then drain well.
- Cook the tongue in broth or water with a small bundle of fresh herbs, salt, pepper, onions, and carrots until tender.
- Once cooked, split the tongue lengthwise. Carefully skin it.
- Wrap the skinned tongue in oiled paper (untada de aceite — oil-coated).
- Soak it in tomato sauce and let it rest on the grill for a while.
- Serve still wrapped in the same paper.
