Roasted Eels

Ingredients
- eels
- flour
- onion
- olive oil
- a little caldo (broth)
- salt and seasoning
Instructions
- Clean the eels and remove the skin. Season them with salt. Coil each eel whole and place in a roasting pan.
- Toast the flour in oil, then add the onion (which should also be golden and sautéed in the same oil). Scatter this mixture over the eels.
- Add a little caldo (broth) to the pan.
- Transfer to the oven and roast until the eels are cooked through.
