Roasted Eels

Ingredients

Instructions

  1. Clean the eels and remove the skin. Season them with salt. Coil each eel whole and place in a roasting pan.
  2. Toast the flour in oil, then add the onion (which should also be golden and sautéed in the same oil). Scatter this mixture over the eels.
  3. Add a little caldo (broth) to the pan.
  4. Transfer to the oven and roast until the eels are cooked through.
