Breaded Criadillas

Ingredients
- criadillas (bull testicles)
- salt
- lemon juice
- breading (egg and breadcrumbs, as for croquetas)
- olive oil for frying
Instructions
- Remove the outer membranes from the criadillas (bull testicles), peeling away one layer and then another with care.
- Cut them in half lengthwise if small, or into three pieces if large.
- Rinse them well under cool water.
- Season with salt and lemon juice and let them rest for a time.
- Coat them in breading as you would prepare croquetas — the traditional method of egg wash followed by fine breadcrumbs.
- Heat olive oil until very hot and fry the breaded pieces until golden and crisp throughout.
