Breaded Criadillas

Instructions

  1. Remove the outer membranes from the criadillas (bull testicles), peeling away one layer and then another with care. Cut them in half lengthwise if small, or into three pieces if large.
  2. Rinse them well under cool water. Season with salt and lemon juice and let them rest for a time.
  3. Coat them in breading as you would prepare croquetas — the traditional method of egg wash followed by fine breadcrumbs. Heat olive oil until very hot and fry the breaded pieces until golden and crisp throughout.
