Quince Paste

Ingredients

Instructions

  1. Rub the quinces vigorously with a cloth to remove the fuzz.
  2. Cook them in cold water until tender.
  3. Peel the cooked quinces.
  4. Grate the peeled quinces.
  5. In a large pot, combine the sugar with enough water to make a syrup brought to ball stage (soft-ball candy temperature).
  6. Gradually incorporate the grated quince into the syrup, stirring well to combine.
  7. Place over the heat and remove from the fire as soon as it begins to boil.
  8. Pour into molds.
  9. Leave uncovered outdoors overnight to set.
