Batallón (Beef Stew with Vegetables)

Ingredients
- beef suet or cow lard (manteca de vaca)
- onion
- flour
- beef
- caldo (broth from cocido / Spanish stew)
- potatoes
- carrots
- salt
Instructions
- Heat the manteca (lard) in a large pot over medium heat. Add the finely minced onion and cook until softened. Toast the flour in the fat, stirring constantly until it takes on color.
- Add the pieces of beef and brown them in the mixture.
- Pour in enough caldo (broth from cocido) to cover the meat and bring to a boil. Reduce heat and simmer for about one hour.
- Season with salt to taste. Add the potatoes and carrots and continue cooking until all vegetables and meat are tender.
- Serve hot.
