Veal German Style

  1. Season a good cut of veal with salt. Lard it with almonds and Málaga raisins. Place the veal in a pot or casserole and pour white wine over it. Put it in the oven to braise.
  2. Meanwhile, dissolve the toasted ground almonds in milk, bring to a gentle boil, and pass the mixture through a strainer. Pour this almond sauce over the veal at the moment of serving.
  3. Note: Walnuts may be substituted for the almonds with very good result, though the color will be much darker.
