Veal German Style

Ingredients
- veal (a good cut)
- salt
- almonds
- Málaga raisins
- white wine
- toasted blanched almonds, ground
- milk
- walnuts (optional substitute)
Instructions
- Season a good cut of veal with salt. Lard it with almonds and Málaga raisins. Place the veal in a pot or casserole and pour white wine over it. Put it in the oven to braise.
- Meanwhile, dissolve the toasted ground almonds in milk, bring to a gentle boil, and pass the mixture through a strainer. Pour this almond sauce over the veal at the moment of serving.
- Note: Walnuts may be substituted for the almonds with very good result, though the color will be much darker.
