White Rice
Origin: Madrid, Spain
Source: Anonymous, 1920
Ingredients
- 1 tablespoon manteca (lard)
- 1 clove garlic
- 1 cup rice
- boiling water
- to taste salt
Instructions
- Heat the manteca (lard) in a pot over medium heat. Add the garlic clove and fry it well, then remove and discard it.
- In that same manteca, add the rice and stir it several times to coat the grains.
- Pour in boiling water and add salt as needed. The amount of water should be sufficient to cook the rice until the grains are tender and whole.
- Stir occasionally and ensure the rice is well cooked with each grain remaining intact.
- For a more refined presentation, transfer the cooked rice to a mold and place it in the oven briefly. Then turn it out onto a serving platter and surround it with fried eggs.
