Creamed Salt Cod

Instructions

  1. Cook a piece of bacalao (salt cod) in water, well washed and desalted, and remove skin and spines.
  2. Make a white sauce of butter seasoned with pepper and mix in a cup of cream (or good milk).
  3. Put the cod in the sauce and boil it so it thickens.
  4. Smooth the surface, cover with breadcrumbs and pour melted butter over; add another layer of crumbs with melted butter on top.
  5. Brown it in the oven or a portable stove.
  6. Serve very hot, surrounded with little slices of bread fried in butter.
