Creamed Salt Cod

Ingredients
- 1 piece bacalao (salt cod)
- butter
- pepper
- 1 cup cream (or good milk in its absence)
- breadcrumbs
- bread
Instructions
- Cook a piece of bacalao (salt cod) in water, well washed and desalted, and remove skin and spines.
- Make a white sauce of butter seasoned with pepper and mix in a cup of cream (or good milk).
- Put the cod in the sauce and boil it so it thickens.
- Smooth the surface, cover with breadcrumbs and pour melted butter over; add another layer of crumbs with melted butter on top.
- Brown it in the oven or a portable stove.
- Serve very hot, surrounded with little slices of bread fried in butter.
