Fried Eggs

Instructions

  1. Heat a generous amount of oil or lard (manteca) in a frying pan until it smokes. Carefully pour the egg (held in a small cup) into the hot fat. Using a skimmer or slotted spoon, baste the egg with the hot oil by spooning it over the top. Remove from heat before the yolk becomes too firm.
