Chocolate Sponge Cake

Ingredients
- 6 tablets chocolate
- 100 grams sugar
- 100 grams butter (manteca)
- 3 whole egg yolks
- 3 whole egg whites
- 150 grams flour
- 1 teaspoon baking soda (bicarbonato)
- 1 teaspoon cream of tartar (crémor tártaro)
Instructions
- Melt the chocolate tablets near the fire with a little water. Add the sugar and beat well until thoroughly combined. Incorporate the butter, continuing to beat without stopping. Mix in the egg yolks and continue beating. Fold in the egg whites, whipped to stiff peaks. Finally, gently fold in the sifted flour combined with the baking soda and cream of tartar.
- Pour the batter into a ring mold (a molde with a center nest). Bake in a gentle oven until a skewer inserted near the center comes out clean.
