Chocolate Sponge Cake

Ingredients
- 6 tablets chocolate
- 100 grams sugar
- 100 grams butter (manteca)
- 3 whole egg yolks
- 3 whole egg whites
- 150 grams flour
- 1 teaspoon baking soda (bicarbonato)
- 1 teaspoon cream of tartar (crémor tártaro)
Instructions
- Melt the chocolate tablets near the fire with a little water.
- Add the sugar and beat well until thoroughly combined.
- Incorporate the butter, continuing to beat without stopping.
- Mix in the egg yolks and continue beating.
- Fold in the egg whites, whipped to stiff peaks.
- Finally, gently fold in the sifted flour combined with the baking soda and cream of tartar.
- Pour the batter into a ring mold (a molde with a center nest).
- Bake in a gentle oven until a skewer inserted near the center comes out clean.
