Chestnut Pudding

Ingredients

Instructions

  1. Boil the chestnuts in salted water until cooked through.
  2. Peel them and pass through a food mill (or mash thoroughly), combining them well with the milk and sugar to form a purée.
  3. Cream together the butter and egg yolks.
  4. Fold in the beaten egg whites carefully.
  5. Add the vanilla or grated lemon zest to taste.
  6. Butter a mold, pour in the mixture, and bake in the oven for about thirty minutes.
