  1. Boil the chestnuts in salted water until tender. Peel them and pass through a food mill (or mash thoroughly), combining them well with the milk and sugar to form a purée.
  2. Cream together the butter and egg yolks. Fold in the beaten egg whites carefully. Add the vanilla or grated lemon zest to taste.
  3. Butter a mold, pour in the mixture, and bake in the oven for about thirty minutes until set and golden.
