Chestnut Pudding

Ingredients
- 500 g chestnuts
- 1 pinch salt
- 250 ml milk
- 10 g sugar
- 25 g butter (mantequilla)
- 6 whole egg yolks
- 1 small amount egg whites, beaten to stiff peaks
- 1 to taste vanilla or grated lemon zest
Instructions
- Boil the chestnuts in salted water until tender. Peel them and pass through a food mill (or mash thoroughly), combining them well with the milk and sugar to form a purée.
- Cream together the butter and egg yolks. Fold in the beaten egg whites carefully. Add the vanilla or grated lemon zest to taste.
- Butter a mold, pour in the mixture, and bake in the oven for about thirty minutes until set and golden.
