Cherry Preserve

Ingredients
- 1 1/2 kg sugar
- 1 kg fresh cherries
Instructions
- Pit the cherries and remove the stems.
- Soak them in cold water for four hours.
- Transfer to boiling water and let them boil for five minutes, then return them to cold water for another four hours, changing the water every hour.
- In a separate pot, prepare a sugar syrup (almíbar) at the proper stage and let it cool.
- Drain the fruit thoroughly and add it to the cooled syrup.
- Heat slowly, stirring occasionally, until the preserve reaches the proper consistency and is ready to be jarred.
