Cherry Preserve

Ingredients
- 1.5 kg sugar
- 1 kg fresh cherries
Instructions
- Pit the cherries and remove the stems. Soak them in cold water for four hours. Transfer to boiling water and let them boil for five minutes, then return them to cold water for another four hours, changing the water every hour.
- In a separate pot, prepare a sugar syrup (almíbar) at the proper stage and let it cool. Drain the fruit thoroughly and add it to the cooled syrup. Heat slowly, stirring occasionally, until the preserve reaches the proper consistency and is ready to be jarred.
