Cream Apple Pie

Ingredients
- 2 pounds apples
- 1 gill water
- sugar
- 0.5 teaspoon powdered cinnamon
- 1 pastry crust
- 1 pint fresh cream
- 5 egg whites
- vanilla
Instructions
- Steam two pounds of apples with one gill of water over fire until the apples will mash perfectly fine and soft.
- Sweeten the cooked apples to taste and let them cool.
- Season the cooled apples with half a teaspoon of powdered cinnamon.
- Line a pie plate with one pastry crust at the bottom only.
- Fill the pie plate with the seasoned fruit.
- Bake quickly in a hot oven.
- Beat one pint of fresh cream lightly.
- Beat the white of five eggs until light.
- Add the beaten egg whites to the cream.
- Flavor the cream mixture with vanilla.
- Spread the cream mixture lightly over the pie with a spoon just before sending to table.
