Cream Apple Pie

Instructions

  1. Steam two pounds of apples with one gill of water over fire until the apples will mash perfectly fine and soft.
  2. Sweeten the cooked apples to taste and let them cool.
  3. Season the cooled apples with half a teaspoon of powdered cinnamon.
  4. Line a pie plate with one pastry crust at the bottom only.
  5. Fill the pie plate with the seasoned fruit.
  6. Bake quickly in a hot oven.
  7. Beat one pint of fresh cream lightly.
  8. Beat the white of five eggs until light.
  9. Add the beaten egg whites to the cream.
  10. Flavor the cream mixture with vanilla.
  11. Spread the cream mixture lightly over the pie with a spoon just before sending to table.
