Lamb Croquettes

Ingredients
- lamb
- onion
- 2 to 3 sour pickles
- salt
- pepper
- 1.5 potatoes boiled Irish potatoes
- 1 pound lamb
- 2 eggs
- powdered crackers
- fat
Instructions
- Boil lamb until thoroughly done.
- Cut the lamb into small pieces, removing all sinews and gristle, and place in a chopping tray.
- Grate onion into the lamb to suit your taste.
- Grate two or three sour pickles into the mixture.
- Chop the whole mixture very fine.
- Season with salt and pepper.
- Mash one and one-half boiled Irish potatoes to a fine meal while hot.
- Add the mashed potatoes to one pound of the prepared lamb mixture.
- Thoroughly mix together with your hand until well combined.
- Form the mixture into small oblong cakes.
- Beat two eggs very light.
- Dip each cake into the beaten egg.
- Roll each egg-dipped cake in powdered crackers.
- Heat fat very hot in a frying pan.
- Put the cakes into the hot fat and fry quickly until brown.
