Lamb Croquettes

Instructions

  1. Boil lamb until thoroughly done.
  2. Cut the lamb into small pieces, removing all sinews and gristle, and place in a chopping tray.
  3. Grate onion into the lamb to suit your taste.
  4. Grate two or three sour pickles into the mixture.
  5. Chop the whole mixture very fine.
  6. Season with salt and pepper.
  7. Mash one and one-half boiled Irish potatoes to a fine meal while hot.
  8. Add the mashed potatoes to one pound of the prepared lamb mixture.
  9. Thoroughly mix together with your hand until well combined.
  10. Form the mixture into small oblong cakes.
  11. Beat two eggs very light.
  12. Dip each cake into the beaten egg.
  13. Roll each egg-dipped cake in powdered crackers.
  14. Heat fat very hot in a frying pan.
  15. Put the cakes into the hot fat and fry quickly until brown.
