Roast Venison

Ingredients
- venison
- bread crumbs
- butter
- salt
- onions
- pork or ham
- lard
- 1 tablespoon flour
- water
- thyme
Instructions
- Make a stuffing by browning bread crumbs and seasoning with butter, salt, grated onions, and finely chopped pork or ham (or substitute with a little green or dry thyme if you do not like onions).
- Stuff the venison roast with this mixture.
- Place the roast in the oven and baste well with butter or lard.
- Continue to baste the roast frequently while cooking for about two hours with a hot fire until done.
- Remove the roast from the oven and take it out of the pan.
- Brown a tablespoonful of flour in the pan from which you took the roast.
- Add a little water to the flour and pan drippings.
- Stir slowly with a spoon until the gravy is well done, adjusting the amount of water to reach desired thickness.
