Roast Venison

Instructions

  1. Make a stuffing by browning bread crumbs and seasoning with butter, salt, grated onions, and finely chopped pork or ham (or substitute with a little green or dry thyme if you do not like onions).
  2. Stuff the venison roast with this mixture.
  3. Place the roast in the oven and baste well with butter or lard.
  4. Continue to baste the roast frequently while cooking for about two hours with a hot fire until done.
  5. Remove the roast from the oven and take it out of the pan.
  6. Brown a tablespoonful of flour in the pan from which you took the roast.
  7. Add a little water to the flour and pan drippings.
  8. Stir slowly with a spoon until the gravy is well done, adjusting the amount of water to reach desired thickness.
