Sublime Sauce (Salsa Sublime)

Ingredients
- 1 piece butter
- 1 tablespoon flour
- 1 glass boiling milk
- onions, cut into rings
- carrots, chopped
- 1 small bunch parsley
- mushrooms (setas)
- pepper
- nutmeg
- 3 tablespoons flour
Instructions
- Melt a piece of butter and dissolve a tablespoon of flour into it.
- Gradually incorporate a glass of boiling milk, stirring without stopping.
- Add onions cut into rings, chopped carrots, a small bunch of parsley, mushrooms, pepper, and nutmeg.
- Stir and let it cook over low heat for three quarters of an hour, then pass it through a sieve.
- In a separate pan, make a light roux with three tablespoons of flour; pour the milk broth over it and let it boil for three minutes.
