Oysters Judic Style

Ingredients
- 3 dozen oysters
- butter
- fine herbs
- mushrooms
- 1 tablespoon pure olive oil
- pepper
- nutmeg
- stale bread crumb
- 1 lemon
Instructions
- Open three dozen oysters and collect their liquor, pressing it through a cloth.
- Heat the liquor to near boiling and put the oysters into it for four minutes.
- Drain the oysters at once and place them in a fire-resistant dish with a piece of butter and an adobo (seasoning mixture) of fine herbs and chopped mushrooms, a tablespoon of pure olive oil, and a strong seasoning of pepper and nutmeg.
- Cover with a layer of grated stale bread crumb and keep over a gentle fire, covered with a portable stove holding a lively fire.
- When the crumb is golden, take off the fire and serve, sprinkling the oysters with lemon juice.
