Broad Beans Home Style

  1. Boil the broad beans in salted water until tender. Drain well.
  2. In a heavy pot or cazuela, warm the manteca (lard) over moderate heat. Add the flour and stir to make a light paste, cooking for a minute or two until it begins to color slightly.
  3. Add the drained beans and turn them gently in the manteca and flour mixture for a few minutes. Season with salt, black pepper, and minced fresh savory (ajedrea).
  4. Just before serving, remove from the heat and bind the beans with the egg yolk—stir gently so the yolk cooks lightly in the residual heat without scrambling, coating all the beans evenly.
